Default Stereo or dual mono recording??

When recording acoustic guitar what is the better idea ... to record in stereo, or to record two mono signals to separate tracks??
I use a Beyer 930 (a cardiod) pointed from below towards the rear of the bridge, and a AKG 414 on omni pointed just above the sound hole.
What are your ideas??

My ideas will be inferior to those of most of the forum experts, if they are still here now it has become so quiet. So far I have done a lot of reading a bit of experimenting.

At the moment I record acoustic guitar in stereo with a LDC mic pointing at the body behind the bridge (to get a bassy sound) and a SDC mic pointing at the neck where it joins the body (to get a trebly sound). Both mics are the same distance from the guitar, usually about half a metre.

What I have learned is: what works for someone else can be a helpful way of getting started but in the end what works best for you will come by your own experimenting.
